Description

We are seeking a skilled and experienced Chef Butcher to join our lifestyle steakhouse. The successful candidate will be responsible for the preparation, portioning, trimming, and presentation of premium meat cuts while ensuring the highest standards of quality, food safety, and consistency.

Key Responsibilities

Receive, inspect, and store meat deliveries according to food safety standards.
Break down, trim, portion, and prepare beef, lamb, poultry, and other meats to restaurant specifications.
Ensure all cuts meet quality, weight, and presentation standards.
Minimize waste through proper yield management and utilization of products.
Maintain accurate inventory of meat products and report stock requirements.
Ensure strict compliance with HACCP, hygiene, and food safety regulations.
Maintain a clean, organized, and sanitized butcher station and equipment.
Work closely with the Executive Chef and kitchen team to support daily operations.
Monitor product freshness and ensure proper rotation using FIFO procedures.
Assist in developing specialty cuts and seasonal meat offerings when required.
Requirements

Minimum 3–5 years’ experience as a Butcher or Chef Butcher in a steakhouse, fine dining restaurant, or luxury hotel.
Strong knowledge of meat fabrication, portion control, aging, and premium beef cuts.
Understanding of HACCP and food safety standards.
Ability to use butcher equipment and knives safely and efficiently.
